Top Italian restaurant CIBO ITALIANO introduces the perfect Sunday Roast

ON FIRST thought, this seems to be a rather strange move for a gourmet Italian restaurant, but not according to well respected chef Lorenzo Otterburn.

Situated in what used to be the Polo House on Marbella’s Golden Mile, former customers were more than happy to give their patronage to Cibo, but he noticed that there seemed to be a lot of reminiscence about Sunday Roasts.

Chef Lorenzo is well placed to know how to cook the very best roast dinner, as when he finished his summer working on a private island in Ibiza he moved to London to work in the Capital’s best steak house Hawksmoor (Regent Street,) which won the accolade of being voted as offering the Best Sunday Roast in the UK by the Sunday Times.

The secret is to only use absolutely top ingredients and to spend as much time on their preparation as possible to ensure that the quality of the food is reflected in its taste.

The beef has to be cooked at 52 degrees for no less than 8.5 hours, the potatoes are roasted in goose fat, the sumptuous Yorkshire puddings cook in beef dripping whilst even the carrots enjoy the flavour of wild thyme, honey and bitter orange. All of this coupled with buttered cabbage and chef recipe beef gravy for the amazing price of just €14.50.

So proud is Cibo of its kitchen - unlike many other restaurants - it stands behind a glass screen so diners can watch their meal being prepared by a brigade of experts in spotless surroundings.

According to Lorenzo, Sunday Roast is Beef, so he won’t be offering a plethora of other meats although diners can of course choose starters and other main courses from the general menu.
