Is the UK driving licence valid in Spain?

With respect, you are giving the wrong advice regarding UK driving licences. First, there is no such thing as an EU driving licence. Second, a UK driver’s licence cannot ‘be used in Spain until it expires’ - far from it in fact. A UK driver’s licence must have the holder’s current address on it by law for it to be valid. As a foreign address cannot be given, the holder is committing an infraction and there is a penalty.

What you say is perfectly correct. But there is more. A Directive of the European Union establishes that a driving permit from any European Union member can be used in another EU country until it expires, even if the driver takes up residence in that country. This Directive, which has been transposed into Spanish law as well, takes precedence over the UK regulation which says the permit is valid for driving even though the holder can be fined for an outdated address. When I referred to an ‘EU driving licence’ I meant a licence from any EU country.
