EMPERADOR SWORDFISH: A simple tasty dish that doesn’t mean spending hours in the kitchen and results in a lovely light lunch.

Emperador – Swordfish

The warmer afternoons over the past week have meant enjoying a few leisurely lunches sat in the sun here at Olive Tree Farm. The longer days have meant the hens are now laying well, but sometimes we need something different to egg dishes! Having spotted a pack of Emperador reduced in our newly refurbished Mercadona store, I decided to give it a go. Although we have had it numerous times whilst eating out, it was just one of those things I never actually bought. If you are having guests for lunch and enjoy pan fried/griddled fish, this a perfect dish to make taking less than ten minutes from start to finish.

Emperador a la Plancha

Ingredients

1 fish fillet per person

Olive oil

Salt and black pepper

Parsley

Garlic

A couple of lemons

Method

Heat a heavy based frying pan or griddle pan. Splash a sprinkle of water in the pan to check the temperature. If it bubbles and evaporates immediately the temperature is correct.

Dry your fish fillets with kitchen paper. Rub a little olive oil on both sides of the fillet and season with salt and pepper. Add the fillets to your hot pan and cook for about 3 minutes. Turn it over and cook the second side for about 2 minutes. Remove from the pan and set aside

For the dressing … Take a few sprigs of parsley and chop finely. Chop or grate a couple of cloves of garlic and add to a mortar and pestle, give it a good crush. Add a couple of tablespoons of olive oil to the garlic, a sprinkle of sea salt, a squeeze of fresh lemon juice and then your chopped parsley and stir through.

Plate up your fish and spoon over some of your dressing. Serve with a couple of lemon wedges a salad and crusty bread.
