Top chef David bring his know how to Bar Trabalon

BAR TRABALON in La Alfoquia has a reputation for some wonderful and innovative tapas, the best Fish and Chips in the area and a Sunday lunch to die for.
Not content with serving such a wonderful array of diverse and tasty meals, they have recently recruited the multi-talented David to expand on the excellent menu. David is a fully trained chef who has been living in the Saliente area for the last 10 years and has a CV to rival most.

His first job in Spain was Head Chef at Desert Springs Golf Club, where he was recruited to open the popular Crocodile Club restaurant. After his success at Desert Springs, David freelanced as Head Chef in a number of restaurants on Mojacar Playa, such as El Atrio, Smugglers and Bay Bistro.

Early in 2014, David received a job offer to work for Jamie Oliver’s luxury gourmet catering service, Fabulous Feasts in the UK. After a successful period working under intense pressure, he returned to his family in Spain to look for work closer to home.
Now firmly settled back in Spain, David has joined the team at Bar Trabalon with a view to introducing a different menu on Thursdays.

These evenings are growing in popularity as he introduces different items to the special evening menu. After the success of the first couple of weeks, when such dishes as Boeuf Bourguignon, Chicken Stroganoff and Coq au Vin have been a big hit with the customers, David has no intention of stopping. When asked about his future dishes, David is very coy and replies: “I want to bring a rustic French/Spanish menu to a Thursday evening, such as Pork Cassoulet and some traditional Spanish dishes. It’s early days but I’m looking forward to receiving feedback from the customers and what dishes they would like to see in the future”.
