 Sloanes Bistro’s team located in Elviria is headed by Nicola, who started working at the restaurant 11 years ago (when it was Chez Michel). She started as a waitress but was quickly promoted to manageress.  She and her husband Alex, who is the resident singer, took over the restaurant in November 2010.


Nicola had loved sport and dancing since she was a child, and began dancing professionally from the age of 17.

The couple met 30 years ago when she joined a seven-piece showband as a dancer where Alex was the lead singer.

Alex served his apprenticeship as a marine electrician at Scott Lithgow shipyards but he’d been singing in public from the age of 12 and that is where his heart had always been, so he moved down to Durham in 1981 to join a show band called ‘ The Musical Time Machine’.

They toured the UK with the band for the next two and a half years before getting married in 1983.

Alex then went into solo performing in clubs, pubs, hotels, night clubs, etc, while working as an electrician during the day.

Nicola then opened her own successful dance school teaching aerobic, step, toning, spinning and body pump classes during the day as a qualified fitness instructor.

In 1986 their daughter, Leigh, was born and in 1990 they had a son, Adam. In 1999 they sold up and moved to Spain, where Alex began working as an electrician and singing up and down the coast, and Nicola started working at Chez Michel, while teaching fitness classes during the day.

Sloanes’ chef, Fernando, was born in Ceuta and studied in Madrid and later in Mijas. He has worked at the Villa Magna five-star hotel and El Bodegon Restaurant in Madrid, as well as several prestigious restaurants in Sevilla and Granada before moving to the Costa del Sol in 1995.

He has worked at the Oasis, Tamarindo, El Coto, and Mijas Playa before coming to Sloanes and has specific training in many areas.
